Corn with Bacon and Jalapenos
Ingredients
8 bacon strips
4 T butter
1 small onion (diced)
4 fresh jalapenos (seeded and finely diced)
4 cups corn
2 t sugar
1 cup heavy whipping cream
½ cup Colby cheese (more may be necessary)
½ cup fresh parmesan cheese
Salt and pepper
Directions

Place bacon in a skillet and cook until slightly browned.

Remove bacon from skillet and chop into pieces.

Add butter to skillet and melt.

Add onions, jalapenos, salt and pepper and fry until onions are slightly browned.

Add corn, sugar and ¼ cup cream.

Cook until corn is tender (add more cream if goes dry).

Add remaining cream, bacon and cheese and heat for 3-5 minutes (more cheese can be added for if more thickening is desired).

Add salt and pepper to taste and serve.
